Question

The torque curves in the manual don't begin at 0 rpm, what are the torque values below those speeds?

Answer

Dynamic torque typically starts out at about 70% or so of the holding torque value and doesn't usually appear on the torque-speed curve; this is an industry standard.

What happens at those lowest speeds is that there is a lot of resonance which is lowering the dynamic torque as it gets going which is why it is lower in that speed range and also why many motor manufacturers begin curves at speeds above 1 rps. Many parallel wound stepper curves can start at 2 or 3 rps specifically because parallel wound motors are meant to be run at higher speeds and therefore many engineers are not concerned with how much torque is available at lower speeds because they are not using them for low speed applications.
